Ingredients
500g of cod fillets (ensure all bones are removed)
1 tbsp thai fish sauce
1 tbsp of green curry paste (gf of course!)
1 large handful of chopped coriander leaves
1 large egg
50g fine green beans
4 spring onions sliced
6-8 tbsp olive oil
Dipping Sauce:
1 tbsp thai fish sauce
1tbsp tamari sauce
juice of 1 lime
1 tbsp chopped coriander leaves
Instructions:
1. Place the fish, fish sauce, curry paste, coriander and egg into a food processor and blend throughly
2. Tip into a mixing bowl and stir in the beans and spring onions
3. Take about a tablespoon of the the mixture and shape it into a ball with your ahnds and place on a clean surface, then flatten it slightly with your palm. Repeat with the rest of the mixture and makes approximately 12 fishcakes.
4. Heat approximately 2 tablespoons of olive oil in the frying pan until hot. Add three or four of the fish cakes and cook over a medium heat for 3-4 mins on each side until golden brown. Repeat with the remainder of the fishcakes, and add oil for each batch.
5. Mix the ingredients for the dipping sauce into a small serving bowl
6. Arrange the fish cakes on a platter with the dipping sauce and garnish with coriander
